Garlic, herb and chilli ciabatte
This bread is really good to snack on while cooking meat on the braai. I made it up last night because I could not find any nice breads at the shop, so I just bought a ciabatta and decided to experiment.
Ingredients:
- 1 medium ciabatta (or bagette)
- 10 baby tomatoes
- 3-4 cloves garlic
- 1-2 pickled chilli’s
- 4 tablespoons freshly chopped herbs (eg basil, rosemary, thyme)
- about ¼ cup olive oil
- salt and pepper to taste
Directions:
- roughly chop the garlic
- put garlic into pestle and mortar, and grind finely – get all the juices out
- add the baby tomatoes and grind well, be careful, because the tomatoe juice can squirt all over the place
- add the herbs and olive oil
- crush and mix all well
- carefully slice the bread open, and smear the mixture all over one side
- grate parmesan cheese over to cover generously (use any other cheese if you prefer)
- put the lid back onto the bread
- bake the bread in the oven for about 10-15 minutes at 180 deg c, or warm slowly on the side of a braai, turning occasionally if on the braai
- divide into quarters
Serves four small slices (as a snack).
