Garlic, herb and chilli ciabatte

This bread is really good to snack on while cooking meat on the braai. I made it up last night because I could not find any nice breads at the shop, so I just bought a ciabatta and decided to experiment.

Ingredients:

  • 1 medium ciabatta (or bagette)
  • 10 baby tomatoes
  • 3-4 cloves garlic
  • 1-2 pickled chilli’s
  • 4 tablespoons freshly chopped herbs (eg basil, rosemary, thyme)
  • about ¼ cup olive oil
  • salt and pepper to taste

Directions:

  • roughly chop the garlic
  • put garlic into pestle and mortar, and grind finely – get all the juices out
  • add the baby tomatoes and grind well, be careful, because the tomatoe juice can squirt all over the place
  • add the herbs and olive oil
  • crush and mix all well
  • carefully slice the bread open, and smear the mixture all over one side
  • grate parmesan cheese over to cover generously (use any other cheese if you prefer)
  • put the lid back onto the bread
  • bake the bread in the oven for about 10-15 minutes at 180 deg c, or warm slowly on the side of a braai, turning occasionally if on the braai
  • divide into quarters

Serves four small slices (as a snack).
