Notes from the Cape

This is a really tasty, simple summer salad. The red pepper makes it really colourful.

Ingredients and directions:

• 1 packet fresh rocket
• 1 small red pepper, thinly sliced
• 1 baby onion, thinly sliced
• ½ cup walnuts, roughly chopped

Layer the ingredients in the above order.

Ingredients for the dressing:

• 5 walnuts
• 2 tablespoons sesame seed oil
• 4 tablespoons cider vinegar
• 1 tablespoon lime juice
• dried herbs, salt & pepper to taste

Directions:

• Power the walnuts in a pestle and mortar.
• Add the rest of the ingredients and stir well.
• Pour the dressing over the salad just before serving.
