Quick Vegetable Curry
Those of you who have been following this site will know that recently we received a parcel from Cheryl in Singapore, all because of the recent blog by post. Well, its time to start using some of the goodies we were sent, so we decided to make a vege curry with popadoms. This recipe is very easy, and unlike most curry’s (due to a bit of cheating), very quick to make.
- 1 table spoon curry powder (more if you like it hotter)
- 1 onion
- 2 cloves garlic
- 2 large potatoes
- 5 courgettes
- 2 carrots
Directions:
- Roughly chop all the veges.
- Mix the curry powder in a bit of water to form a paste.
- Fry the onions and garlic in a some butter until golden brown.
- Add the curry paste and stir in well.
- Add the veges and stir in the mixture well.
- Add enough water to just about cover the mixture, and cook on high until most of the water has evaporated, stirring occasionally – this is the cheating bit!
- Serve with rice.
Hint: when the rice is cooked, stir in a tablespoon of dukka for a really yummy, North African flavour.
- Put about ½ cm oil in a pan, and allow to get very hot.
- Put one popadom at a time in the oil, and allow to fry for a few seconds.
- Drain on paper towel.
- Do not (as I stupidly did) use a plastic spatula.
