Winter Vegetable Casserole
The original intention was to make a vegetable pot pie, which I found on Stephanie’s site – the happy sorceress. However, I could not get half of the ingredients (ok – some of the ingredients – mainly potatoes soup and pastry) from our local supermarket, and I was too lazy to drive to a bigger supermarket. So, several amendments were made.
Here’s the recipe:
- 1 handful baby leeks, chopped
- 3 cloves garlic
- 2 medium potatoes, sliced into 1cm pieces and lightly steamed
- 10 -15 French beans
- 1 red pepper, sliced
- 2 cups mixed broccoli & carrots, chopped
- ½ cup dry white wine
- ½ cup fresh or frozen peas
- 1 tin vegetable soup
Method:
- Fry the garlic and leeks for a couple of minutes.
- Add the red pepper, beans, broccoli & carrot
- Add the potatoes
- Add the wine with salt, pepper & herbs to taste
- Simmer for about 5 minutes
- Add the tin of soup & the peas, and simmer until done
Hints:
- You can add a dash of Worcester sauce and a chilli for flavour if you like.
- Use whatever vegetables take your fancy.
- You can also (like Stephanie did) put it into a pie dish, add a crust and bake. If you do, simmer off some more of the juice.
Serve with rice.
