Winter Vegetable Casserole

The original intention was to make a vegetable pot pie, which I found on Stephanie’s site – the happy sorceress. However, I could not get half of the ingredients (ok – some of the ingredients – mainly potatoes soup and pastry) from our local supermarket, and I was too lazy to drive to a bigger supermarket. So, several amendments were made.

Since the winder comfort food event is currently running, I also decided to turn the recipe into a really tasty vegetable stew (event if its 30 dec C down here in Cape Town at the moment!).

So, here’s the recipe:

  • 1 handful baby leeks, chopped
  • 3 cloves garlic
  • 2 medium potatoes, sliced into 1cm pieces and lightly steamed
  • 10 -15 French beans
  • 1 red pepper, sliced
  • 2 cups mixed broccoli & carrots, chopped
  • ½ cup dry white wine
  • ½ cup fresh or frozen peas
  • 1 tin vegetable soup

Method:

  • Fry the garlic and leeks for a couple of minutes.
  • Add the red pepper, beans, broccoli & carrot
  • Add the potatoes
  • Add the wine with salt, pepper & herbs to taste
  • Simmer for about 5 minutes
  • Add the tin of soup & the peas, and simmer until done

Hints:

  • You can add a dash of Worcester sauce and a chilli for flavour if you like.
  • Use whatever vegetables take your fancy.
  • You can also (like Stephanie did) put it into a pie dish, add a crust and bake. If you do, simmer off some more of the juice.

Serve with rice.

I found it really tasty and fulling, let me know what you think.
